Join farmer, chef, butcher and author Meredith Leigh at this intensive skillshare about heritage poultry cooking and charcuterie. The program will focus on how to properly prepare a heritage breed chicken and how cooking with these birds is different from using industrial breeds in the kitchen. The session will cover piecing, de-boning, charcuterie, and cooking, plus we will discuss how the animal's life affects the eating experience.
