Learn the skills! You will start with an introduction of the course-basic sanitation requirements, learn safe knife skills and learn common used cuts with a preparation of a Crudite platter and garnishes. Create a recipe card for meals and learn about different food groups and what is in them. Make an 8-way chicken-using your knife skills, split a whole chicken into eight pieces and prepare a stock and then prepare a roux and gravy. Learn about roasting, baking, poaching and/or braising. Learn the difference between frying and sauteing to prepare some delicious dishes. Complete your meal preparing your veggies and starches! Decorate your plate in an artistic, decorative way as you would see in a restaurant and enjoy! Chef Dominic graduated top of his class from Florida Culinary Institute and has served some of the most prestigious golfers and sports figures in the world while serving as a Sous Chef for PGA National Spas and Resorts in Palm Beach, FL.
